Green Tomato Mincemeat

Green Tomato Mincemeat
There are lots of green tomatoes in the garden right now and I like to make mincemeat out of them for pies at Christmas. Here are the ingredients:

12 cups green tomatoes chopped
16 cups apples unpeeled, cored
4 cups golden raisins
chopped, sultanas
2 cups currants
1 cup vinegar
2 tablespoons lemon zest
2 tablespoons orange zest
6 cups sugar
2 tablespoons cinnamon
2 teaspoons nutmeg
3 teaspoons salt
2 pinch cloves
8 tablespoons margarine

Directions

1. Chop in processor apples and tomatoes.
2. Add remaining fruit and process.
3. Blend everything in a large pot.
4. Cook slowly for 1 1/2 to 2 hours.
Put mincemeat into zip lock freezer bags and zip shut. There is no need to bottle it and you can have the mincemeat ready for a pie anytime.
